The kids are out of school this week so I’ve been trying to come up with some easy but nutritious meals to serve for lunch. One of their favorites meals is Chicken Stir Fry. It is so easy to prepare and quick as a wink as well.
Chicken Stir Fry Recipe
1 small onion
1 small bell pepper
3 T Olive oil
1 bag of precooked chicken strips (I use fully cooked chicken fajitas strips)
1 bag of frozen vegetables (broccoli, Italian beans, carrots, baby corn cobs, water chestnuts and red peppers)
Soy Sauce as desired
Salt and Pepper as desired
Before I cook my stir fry I go ahead and start my rice cooking. Remember, if you are using brown rice, it takes longer than white rice to cook.
Use a food processor or whatever you use to dice your veggies. Combine the onion and pepper and add to 3 T of Olive Oil. Cook on medium low heat.
Once the onion has become translucent, add 1 package of precooked chicken strips and a bag of frozen vegetables. Continue cooking on medium low heat for 10 to 15 minutes.
Serve over rice. Add Soy Sauce as desired (not everyone in our family likes Soy Sauce so I don’t add it while cooking).
